So I am in the garden and I am looking at the beets that Niles and Leah so nicely weeded this past weekend. (a couple of awesome travelers that wanted to weed for food...that's another story!)
Anyway, they looked like they needed another week but I guess with last weeks rain they decided to make an appearance. For those of us who love beets this is the best day ever!
We like to roast them, peel the skins off, slice them, add a little olive oil and wine vinegar and a bunch of cut up thyme. Delicious!
Remember that the beet greens are also edible. 2 in 1! How can you go wrong. These beautiful babies are at the stand this weekend along with all of our varieties of kale, green and yellow string beans, summer squash (zucchini, yellow crooked neck and patty pan), cucumbers (regular slicing and kirbies), broccoli, sugar snap peas, our glorious herbs, and of course our great jams and relishes. Baked goods this week are English Muffin Bread, Whole Wheat Bread, Early Bird Muffins, Zucchini muffins and coffee cakes made with our signature jams.
Saturday we offer quiche . That is a moment creation so I do not know what kind we will have. But the crust is great!
