Everyone looks at these cute summer squash and always say "I don't know what to do with them...how do you cook them"?
Well they are just like any other summer squash...just prettier! We slice them in rounds and grill them. Or cut the top off, steam and stuff them. But our most exciting creation happened this weekend when we made Patty Pan Pizzas on the grill with some of our bigger patty pans. What a fantastic gluten free treat that was!
Slice them in 1/4 inch rounds. Brush them with Italian, or your favorite, salad dressing and grill them until they are pliable. Top with our organic Heirloom Marinara sauce, mozzarella cheese, some organic basil, pepperoni (or any topping), and put the lid down so the cheese melts. Wow, wow, wow...everyone said they were just like NYC pizzas because you could fold them in half when you ate them! Try them, you will be amazed.
